A fingerling is a very small, finger-shaped variety of potato that may be of any heritage. Fingerlings are an actual variety of small potato and not to be confused with an immature new potato.
Fingerlings are more expensive than conventional varieties and are considered a delicacy generally enjoyed lightly roasted and split and used in a side dish or as a colorful, flavorful addition to a salad.
